Vegan Shakshuka with All-Day Scramble

Shakshuka, a popular Middle Eastern dish which is believed to have originated in Tunisia, is traditionally made with eggs poached in a spiced tomato and pepper sauce. We’re putting a spin on the traditional dish by making it vegan using Hodo Foods All-Day Egg Scramble.” - Deborah Murphy


Ingredients

  • 1 (8 oz) package Hodo All-Day Scramble Locate Product

  • 2 tbsp olive oil

  • 1 yellow onion, thinly sliced

  • 1 tsp cumin

  • 1 tsp coriander

  • 1 tsp smoked paprika

  • 1/4 tsp red pepper flakes

  • 1 tbsp tomato paste

  • 3 cloves garlic, minced

  • 1 (12 oz) jar fire roasted red peppers, drained and chopped

  • 1 (28 oz) can crushed tomatoes

  • 3 tbsp chopped fresh parsley

  • 1/4 cup vegan feta cheese, crumbled

Instructions

  1. Add olive oil and sliced onion to a large skillet with tall sides. Sauté over medium-high heat until onions are golden brown and softened, about 10 minutes.

  2. Add the spices (cumin, coriander, smoked paprika) and tomato paste. Sauté for another 1-2 minutes.

  3. Stir in the minced garlic and fire roasted pepper. Sauté for 2 minutes.

  4. Add the crushed tomatoes and bring to a simmer. Allow to simmer for 10 minutes, or until thickened.

  5. Spoon the All-Day scramble onto the tomato mixture. Cover and cook for 1-2 minutes to warm up the scramble.

  6. Remove from heat, garnish with fresh parsley and vegan feta. Serve with bread for dipping.
