Plate of cubed Extra Firm Tofu with cucumbers, tomatoes, green onions

Ingredients

  • 1 (10oz) package Hodo OrganicFirm Tofu, cut into small cubes Locate product

  • 1 cup bulgur cracked wheat

  • 2 cups of water or vegetable stock

  • 2 cups of seedless cucumbers, small diced

  • 2 cups of Italian parsley, chopped

  • 2 cups of cherry tomatoes, halved

  • 1/2 cup green onions, chopped

Dressing:

  • 2 cloves garlic, minced

  • 2 tsp Dijon mustard

  • 1/4 cup fresh lemon juice

  • 1/2 cup extra virgin olive oil

  • 1 tsp kosher salt

  • 1 tsp honey or sugar

  • Black pepper to taste

Instructions

  1. Boil stock or water and pour over bulgur. Cover and leave to steam for 15 minutes, then fluff.

  2. Whisk dressing ingredients together.

  3. Toss bulgur with tofu, cucumbers, tomatoes and herbs and pour on dressing (to taste).
