Ingredients

  • 1/2 package Hodo Moroccan Cubes, cooked according to package directions locate product

  • 1 & 1/2 cups cooked couscous or other short grain (or GF grain)

  • 1 cup sliced cherry tomatoes

  • 1 cup sliced cucumber

  • 5 tbsp hummus of choice

  • 1-2 tablespoons lemon juice

  • Fresh parsley, for garnish.

Instructions

  1. Divide the Moroccan Cubes, couscous, tomatoes and cucumber among baby and parent plates. We like 1/2 cup cooked couscous, 1/4 cup tofu, 1 tablespoon of the diced cucumber and 4-5 tomato haves for baby plate and the rest tossed in a bowl for the parent.

  2. Dollop 1 tbsp of hummus onto baby's plate, then thin the remaining hummus with lemon juice to taste and a pinch of freshly ground black pepper, if desired. Drizzle over parent bowl and garnish with fresh parsley.
