The Sabich Sandwich! Inspired by a dish at one of our oldest restaurant partners in North Berkeley, @Sauls_Delicatessen, we came up with a quick and simple version using our #HodoHarissaCubes! For years, we had a farmers market stand every Thursday in front of Sauls!
Sabich Halabi was an Iraqi Jew who was known to have the first sabich stand in Tel Aviv. Originally eaten on the sabbath, since all ingredients are pre-prepared!
Ingredients
1 (8oz) package of Harissa Cubes (can sub Moroccan Cubes) locate product
1/4 large eggplant, cubed
Israeli Salad (recipe below)
2 Pitas (can use GF pitas)
Hummus
Israeli Salad*
1/2 cucumber, diced
1 medium tomato, diced
1 small bell pepper, deseeded and diced
1/2 small red onion, diced
1/2 cup packed flat leaf parsley & mint, roughly chopped
2 tbsp EVOO
2 tbsp lemon juice
Salt & pepper to taste
*This is also known as a Palestinian, Arab, Middle-Eastern salad :)
Instructions
Simply cube the eggplant in 1/4” squares, toss in a bowl with our cubes, and place in a toaster oven at 350 for 8 minutes or until eggplant is tender.
Throw together an Israeli salad.
Spread a thick layer of hummus into pita & layer in the Israeli salad, roasted eggplant & tofu cubes.
