Mango Lime Salad with Thai Curry Nuggets

Ingredients
1 (8oz) package Hodo Thai Curry Nuggets Locate Product
1/5 cup red onion, sliced thinly
3 tbsp carrots, sliced thinly
1/3 cup cucumber, sliced thinly
1/3 cup cherry tomatoes
1 qt mixed salad greens of your choice
2 tsp fresh ginger, peeled and minced
1 tsp fresh garlic, peeled and minced
½ cup mango, peeled and cut into thin slices
3 tbsp lime juice
1 tbsp agave (optional)
3 tbsp rice wine vinegar
Pinch white pepper
2 tbsp oil of your choice
Salt & pepper
Instructions
Cut all veggies and nuggets and set aside.
Puree ginger, garlic, and mango in a food processor.
Add all other dressing ingredients to the puree except the oil.
Add oil slowly to blend.
Toss all ingredients together and enjoy!
