Take your banh mi to the next level with this Teriyaki Tofu twist! Ingredients
1 (16 oz) Hodo Japanese Teriyaki Tofu kit (or Hodo Korean BBQ Tofu kit)
1 small baguette, sliced in half, then cut lengthwise to create a top and bottom bun
1 cucumber, thinly sliced lengthwise
Fresh cilantro leaves
Pickled Vegetables
1 small carrot, julienned
1/2 medium daikon radish, julienned
2/3 cup rice vinegar
2/3 cup hot water
1 tbsp maple syrup
Spicy Mayo
1/4 cup vegan mayonnaise
2 tbsp sriracha
Instructions
1. In a medium bowl mix the carrot, radish, rice vinegar, hot water, and maple syrup. Set aside to quick pickle while you prepare the remaining ingredients.
2. In a small bowl, whisk together the spicy mayo ingredients. Set aside.
3. Prepare the Hodo Japanese Teriyaki Tofu according to the package instructions.
4. Assemble the the sandwiches, spread the spicy mayo onto the bottom bun of each sandwich, then add half the Hodo Japanese Teriyaki Tofu to each sandwich. Top with the pickled vegetables, cucumber slices, a few cilantro leaves, and then the top bun.
