Vegan Baked Fried Rice with Soy Gochujang Sauce

Ingredients
Fried Rice
1 (10oz) package Hodo Organic Extra Firm Tofu, crumbled into small pieces Locate Product
2 cups cooked and cooled brown rice (you can prep this ahead of time)
1 head medium sized broccoli, cut into small pieces
2 tbsp sesame oil
1/2 - 1 tsp salt
1 tsp garlic powder
Black pepper to taste
Sauce
3 tbsp soy sauce
2 tbsp rice wine vinegar
2 tbsp gochujang paste
1 garlic clove - minced
2 tsp maple syrup
1 tsp grated ginger
Optional Toppings
1/2 diced avocado
1/4 cup chopping scallions
Instructions
Preheat oven to 425 degrees.
Add rice, carrots, tofu and broccoli to a sheet pan lined with parchment paper. Coat in oil, salt, pepper and garlic powder. Bake for 30-35 minutes.
Add sauce ingredients to a bowl and mix together until smooth.
Divide out fried rice into two bowls, pour sauce evenly over both servings. Top with scallions and avocado if using
