Southwest BBQ Salad

Looking for a quick and easy meal that’s light, refreshing, and hearty? Our Barbecue Cubes add a significant amount of flavor and aromatics to this fresh and bright summery salad!


Ingredients

  • 2 (8oz) packages Hodo BBQ Cubes (can sub Harissa Cubes for a spicy kick!) locate product

  • 2 romaine hearts (or one large head) washed, dried, & cut into strips

  • 3 small corn tortillas, cut into strips and pan fried in a bit of oil or in toaster oven

  • 1 can black beans, rinsed and drained

  • 1 cup frozen or fresh corn kernels

  • 1 large tomato diced

  • 1 avocado pitted and sliced into wedges

  • 1/4 red onion, julienned

  • 2 limes, quartered

  • Salt & pepper to taste

  • Ranch & extra BBQ Sauce

  • 10 short sprigs of fresh cilantro

Instructions

  1. Toss the cubes into a skillet and saute for 5 minutes or until desired crispiness

  2. Lay lettuce into salad bowl and assemble all ingredients to your liking

  3. Drizzle Ranch, extra BBQ sauce, salt & pepper to taste

  4. Toss salad, squeeze a little lime and enjoy!
