Cucumber & Tofu Sandwich Bites

We’ve partnered up with Hee Jee from White Blank Space to come up with a quick, easy, nutritious, and tasty meal with some of our favorite brands! This is a quick lunchbox idea that her toddler loves!

“You got to try this tofu sandwich for your kids (and yourself.) It's so easy to make, nutrient-dense, and addictively delicious! To make this sandwich, we cut Hodo Extra Firm Tofu into thin slices and then lightly seasoned and pan-fried them. Then we layered the tofu with a slice of crunchy cucumber between soft Dave's Killer Bread. This way, we get layers of yummy seasoned and fried tofu in our sandwich. Who wouldn't love that? For little kids, cut the sandwich into bite sizes and thread with a bamboo skewer, so it's easier for them to hold the sandwiches. My toddler likes to eat all the components separately, but whatever works, am I right? Packed in a fun Innobaby FlexNLock Lunchbox, my kiddo was so excited for this lunch.” - Hee Jee

Ingredients

  • 1 (10oz) package of Hodo Extra Firm Tofu Locate product

  • 3/4 tsp salt

  • 1/4 tsp garlic powder

  • 1/4 tsp onion powder

  • 1 tbsp olive oil

  • 3 slices of Dave's Killer Bread- White Bread Done Right

  • 2 mini cucumbers

Instructions

  1. Cut tofu into 1/4" thickness, crosswise.

  2. In a mixing bowl, combine salt, garlic powder, and onion powder. Sprinkle the seasoning on both sides of the tofu slices.

  3. In a nonstick pan, heat olive oil over medium heat. Place tofu slices and cook until golden brown and crispy on both sides. Let tofu cool before assembling the sandwich.

  4. Cut off the crusts of the bread slices. Then cut the bread into 4 slices, crosswise.

  5. Cut the cucumbers to match the length of the bread sticks, and then slice them into 1/4" thickness.

  6. Assemble the sandwiches by layering bread, tofu, cucumber, tofu, and bread. Cut the sandwiches in half to make them bite size. Thread with a bamboo skewer to hold the sandwich bites in place.
