Kale & Yuba Noodle Salad

Yields: 6 Servings

Ingredients

  • 1 (8oz) package of Hodo Yuba Sheets (Spicy or Sesame noodles also work great with this recipe!) Locate Product

  • 10oz Pre-cut tuscan/dino/lacinato Kale (1lb if using whole)

  • Fresh lemon juice

  • 1/2 cup chopped herbs (parsley & scallions)

  • 1/2 cup chopped bell peppers and red onions (optional β€” this just adds more color and crunch)

  • Toasted sesame seeds (optional β€”to taste)

  • Splash of lemon juice β€” to taste

Instructions

  1. If using whole kale, strip the rib and tear into bite size pieces. In a bowl, add yuba noodles to kale and using your hands, massage the kale with the yuba strips, until the kale is well macerated.

  2. Splash lemon juice, herbs and sesame seeds and toss to mix.
