Summer Tagine Salad with Harissa Cubes

Ingredients
1 (8oz) package Hodo Harissa Cubes (can also sub with the Moroccan Cubes or the BBQ Cubes) Locate Product
2 zucchini sliced into ¼” slices
2 carrots sliced into ¼” slices
1/2 red onion, sliced
1 tbsp crushed/chopped fresh ginger
1 tbsp chopped garlic
1/4 cup chopped parsley
2 tbsp lemon juice
Salt and pepper to taste
Instructions
Mix Hodo cubes, zucchini slices, carrot slices, red onion slices, chopped ginger, chopped garlic in a bowl. Place on a baking sheet and roast on 375 for 30 min. Turning once or twice to ensure even coloring.
Remove and let cool.
Mix with chopped parsley, lemon juice and S&P
