Summer Tagine Salad with Harissa Cubes

Yields: 2 Servings

Ingredients

  • 1 (8oz) package Hodo Harissa Cubes (can also sub with the Moroccan Cubes or the BBQ Cubes) Locate Product

  • 2 zucchini sliced into ¼” slices

  • 2 carrots sliced into ¼” slices

  • 1/2 red onion, sliced

  • 1 tbsp crushed/chopped fresh ginger

  • 1 tbsp chopped garlic

  • 1/4 cup chopped parsley

  • 2 tbsp lemon juice

  • Salt and pepper to taste

Instructions

  1. Mix Hodo cubes, zucchini slices, carrot slices, red onion slices, chopped ginger, chopped garlic in a bowl. Place on a baking sheet and roast on 375 for 30 min. Turning once or twice to ensure even coloring.
