Chinese No-Chicken Salad Sandwich (tip: uses Spicy Yuba)

Yields: 4 sliders or 2 sandwiches

We pay homage to a California classic, the Chinese Chicken Salad, with a quick and easy version using Hodo’s Spicy Yuba Noodles. So simple and super versatile, you can pull this together in minutes for a fresh, satisfying & flavorful meal!

Ingredients

  • 1 (8oz) package of Hodo Spicy Yuba Noodles LOCATE PRODUCT

  • 1/4 small purple cabbage thinly sliced

  • 1/2 cup flat parsley leaves

  • 2 scallions cut in 1-inch lengths

  • splash of lemon juice

  • 1/2 cup of almond slivers

  • 4 slider buns or english muffins (or sub GF buns)

Instructions

  1. Slice cabbage and place in mixing bowl.

  2. Add the Spicy Yuba Noodles to the bowl.

  3. Add herbs, nuts & lemon juice and toss through.

  4. Assemble your sandwiches together by stuffing them full!

  5. Enjoy!
