Moroccan Couscous Salad

Yields: 2 Servings

Ingredients

  • 1 (8oz) Hodo Chermoula Moroccan Cubes (or substitute with our other cubes flavors) LOCATE PRODUCT

  • 2 cup cooked couscous

  • 1/4 cup soaked and drained raisins

  • 1/4 cup chopped roasted and salted almonds

  • 1/4 cup chopped parsley

  • 2 tbsp lemon juice

  • Salt & pepper to taste

Instructions

  1. Roast Hodo Moroccan Cubes at 375 degrees for 20-25 min. Turn cubes once or twice to ensure an even cook on all sides.

  2. Cook couscous.

  3. Toss Moroccan Cubes with couscous while still warm so the couscous soaks up some of the flavors from the tofu. Cool down.

  4. After it’s chilled, mix in raisins, chopped almonds, chopped parsley, lemon juice, and salt & pepper to taste.
